Introduction
Acid protease is an enzyme that breaks down proteins under acidic conditions and catalyzes the hydrolysis of peptide bonds in proteins, ultimately leading to the breakdown of larger protein molecules into smaller peptides or amino acids, and this enzyme activity is critical in a variety of biological processes.
Application
It is used in fermented food processing, where it plays a role in the fermentation of foods such as soy sauce, miso and fermented vegetables, and in meat processing, where it breaks down tough connective tissue to tenderize meat.
