Introduction
Bacillus amylase catalyzes the hydrolysis of starch molecules into smaller carbohydrates such as maltose and glucose for easy uptake and utilization by organisms for energy.
Application
Used in bakery products to improve dough texture and increase product softness; applied in the saccharification stage of beer brewing; used in the production of sweeteners such as fructose corn syrup and glucose syrup.
