Introduction
Catalase is a selected biological enzyme extracted from deep fermentation culture of Aspergillus niger, then refined by microfiltration, ultrafiltration and vacuum freeze-drying technology. Catalase can decompose hydrogen peroxide into water and oxygen to remove residual hydrogen peroxide in food processing and eliminate oxidative toxicity. In addition, catalase can oxidize other cytotoxic substances such as formaldehyde, formic acid, phenol and ethanol.
Application
Remove hydrogen peroxide produced or residual in food processing such as sterilization and bleaching; used in health care products to give the product free radical scavenging function; food preservation; milk sterilization and desugarization.
