Introduction
Glucose Oxidase is produced by deep fermentation with Aspergillus niger, purified, formulated and dried, and it specifically catalyzes the formation of β-D-glucose into gluconic acid and hydrogen peroxide in the presence of oxygen.
Application
Used in the production of gluconic acid; used in flour improvement to enhance the structure of gluten network and whitening of flour; used in wine and beer brewing to prevent oxidation and contamination by stray bacteria.
