Introduction
Invertase, also known as sucrase, furanofructoside fructose hydrolase. This product is produced by fermentation of Saccharomyces cerevisiae strains in a deep medium.
Application
Used in the production of ice cream, liquid chocolate, candied fruit, all kinds of candy, jam, artificial honey, etc., to inhibit the crystallization of sucrose, improve the sweetness, and enhance the taste, flavor and color of food.
