Introduction
Lipase is a serine hydrolase that catalyzes the hydrolysis of triglycerides, ultimately producing glycerol and fatty acids. This product is obtained from Aspergillus niger through deep fermentation, purification, formulation and drying.
Application
Used in the processing of bakery products to strengthen gluten and improve product texture; used in dairy production to enhance product flavor.
