Overview of Chitinase
Chitinases (EC 3.2.1.14) are glycoside hydrolases that act by stimulating thesplit of the β-1,4 glysosidic bonds between the N-acetyl-d-glucosamine (GlcNAc) chains that make the chitin polymer. Chitin widely exists in the environment and is the main component of insect exoskeleton, fungal cell wall and arthropod shell. Chitinase catalyzes the hydrolysis of glycosidic bonds in chitin, leading to its degradation into low molecular weight products, such as chitosan oligosaccharide (COS) and GlcNAc. The physicochemical properties and sources of chitinase are the main basis for determining its functional properties and hydrolysates. Several chitinases have been studied and characterized, and they are widely used in agriculture, food, environment, medicine and pharmaceutical companies.
Application of Chitinase in Food Preservation
Food can be preserved by several methods, whether chemical or microbial. However, the use of microorganisms and their products has some advantages, such as feasibility, time saving and cost saving. Chitinase producing microorganisms showed good antifungal effects on most post-harvest fungal pathogens for example, chitinase (ChiC) produced by Salinivibrio sp. can be used for food preservation because it shows antifungal activity against fungal pathogens (Rhizoctonia solani and Fusarium oxysporum). Chitinases can be used for food preservation because they destroy fungal cell walls, inhibit spore germination, and thus reduce food spoilage. Therefore, it can be concluded that chitinase can be used as an effective and promising food preservation strategy.
