Overview of Film Coating for Preservation
Film coating preservation is an essential auxiliary technology for fruit and vegetable storage based on the principle of micro-air conditioning. The film-coating agent is the only alkaline polysaccharide among natural polysaccharides, widely found in the shells of shrimps and crabs and the cell walls of higher plants. It has good inhibitory effect on E. coli, Pseudomonas fluorescens, Staphylococcus aureus, Bacillus subtilis and so on. It can also inhibit the physiological changes of fresh food and increase the surface luster of fruits and vegetables.
Citric acid is an edible acid, that mainly inhibits bacteria, protects color, improves flavor, and promotes sucrose conversion. It also has a chelating effect, which can remove some harmful metals and prevent oxidation caused by enzyme catalysis and metal catalysis, thus preventing fruits and vegetables from discoloring and changing flavor.
