Tara Gum, CAS 39300-88-4, is isolated from the endosperm of C. spinosa seeds, available as white to white-yellow odorless powder. Tara Gum pose similar thickening effect as guar gum and locust bean gum, as the active substances of all these gums are the galactomannans. Tara Gum is widely used as food thickening and gelling agent. It is widely accepted as safe food additive in many countries with E number E417.
