The Role of Lipids in Food Preservation

Lipids are used in food preservation primarily as a barrier to prevent the transfer of gases (e.g., oxygen and carbon dioxide) and moisture. In addition, some specific types of lipids (e.g., waxes) provide a protective film against contamination of food with microorganisms and other contaminants.
