The Role of Lipids in Food Preservation

In addition, some specific types of lipids (e.g., waxes) provide a protective film against contamination of food with microorganisms and other contaminants. Lipids and certain natural essential oils have a high nutritional value of their own, so they simultaneously add to the nutritional value of food while preserving it. While this effect may not be as pronounced as directly ingesting these substances, it still has health benefits.
